I'm considering getting a Miata (NC), but I just don't have enough leg room. I know there are accelerator and dead pedal mods for tall people. I'm hoping somebody around DFW has made those mods and I can sit in your car and see how it feels.

I would be looking into people with custom mounted race seats instead. Should buy you more space than anything you could do with pedals.
I had an NC, where I did cut down the dead pedal for some extra leg room. Worked well, and it's not hard to do.
Take out the dead pedal and add a spacer to the accelerator pedal to angle it down more. Those two things alone make it feel huge. You can also unhook the center strap on the seat bottom and add a few washers to the front seat bolts for a better seat angle and lower your ass a little.
I have pedal mods and seat washers in my NC you're welcome to try out. I'm 5'12".
