Sounds like you have a leaky headgasket. It has probably been like that for a long time. The missing thermostat is a dead giveaway, as the previous owner probably removed it to help keep the car from overheating. If you put the thermostat back in the car will probably start overheating. I would watch the coolant gauge every 60 seconds and get a AAA membership immediately!

I think the jiggle valve was an option on the Spec Miata only.
Didn't you replace some coolant hoses and all that recently? Would have been an excellent time to do the thermostat. Planning ahead is fun like that.
I'd probably go ahead and do the timing belt while you're doing the thermostat. I'm assuming it hasn't been done yet, going by all the other neglected maintenance posts you've been making. Did your full check up include telling you to get that done?

I just pulled off an upper-decker and my overflow tank started bubbling because the jiggle valve wouldn't work.
My jiggle valve stopped working a long time ago!

I, too, have a problem with my jiggle valve...must be getting old. (the jiggle valve, I mean)
Don't forget you need to make sure the jiggle valve is at the highest position if it is mounted vertically (like on a Miata) otherwise it isn't going to help much.
