Removing power steering.

How difficult is it to remove the power steering? The car is too little to really need it, and I figured I'd get more power and fuel mileage if it was gone. If it's so expensive that the fuel savings won't pay for it, I won't worry about it.

You won't get any power or MPG from pulling it. It's not worth it if you don't track the car.
