Well, I'll be living in the Las Colinas area, but I don't mind driving further out 20-30 miles.
Lots of fun roads further west of Fort Worth out in the Mineral Wells and Weatherford area. But you have to get off the main roads and explore the country roads that criss cross the area. I'm from the area and know most of them pretty well.

What side of the Metromess do you want to go to? I would sugeest a fun run over to Clarks outpost in Tioga for some good BBQ. Maybe a day trip to Tahlamena scenic drive in Tahlahina OK to Mena ,AR. I don't recall who on here suggested MotorcycleRoads.US, but that is a good place to get ideas as well.
I was thinking more like a 50-60mi loop.

About the only fun in DFW is freeway on and off ramps............Seriously, I rode motorcycles for years and a group of us would meet on Sundays mornings. Usually a 200 mile round trip was necessary to ride anything kinda decent. Other posts here are pointing you in the right direction. Anytime you have a three day weekend head to Arkansas....
Motorcycle roads.us is a good place to start but it's short MANY roads. One of the best bets is just to get out and drive around the area staying well away from city centers and what not. I've found a couple of good roads up here around Saginaw that are fun to drive. A lot of times though with country roads surrounding this area you get a lot of traffic and even being on a motorcycle it's a PITA to get around it and actually enjoy the road.
