A colder thermostat just opens at a lower temp keeping the engine cooler. Some argue that it is good, some argue that it is bad (fuel doesnt atomize like it should at colder temps). I would run a stock thermostat unless you are going to go Forced Induction (turbo or sc) Generally the engineers have done their homework.

sounds to me like your good ol boys at merlin aren't so good. $100 is ridiculous. It's possible it's not that at all. It could be the coolant mixture, didn't you just buy that car? Did you check the radiator level ever? It could have been low from the get go, or too much antifreeze to water can cause you problems. Keep us posted. Denton to Carollton isn't that far, just don't drive that sucker hot.
got it from a tote the note, going to go ahead and drain it and change the thermostat, 20 bucks wont destroy my wallet too bad.

I usually go with 40% antifreeze and 60% distilled water.
